Season the pork fillet with salt and black pepper.
Heat 2 tablespoons of vegetable oil in a pan and sear the pork fillet on all sides until browned.
Add garlic and thyme to the pan and continue to cook for a few minutes.
Add 50 g of butter to the pan and let it melt.
Place the thyme on top of the garlic and the pulp on top so that it floats in the air.
Transfer the pork fillet to a baking dish and bake in the oven for 20 minutes.
In the same pan, add 3-4 tablespoons of vegetable oil, red onion, and chili. Fry until tender.
Add the pepper and continue to fry until tender.
Add cherry tomatoes, salt, black pepper, and 1/2 tablespoon of teriyaki sauce. Fry for 1 minute and turn off the heat.
Once the pork fillet is cooked, remove it from the oven and let it rest for a few minutes.
Slice the pork fillet and serve with the cherry tomato mixture.
Garnish with a handful of parsley.
