In another pan, heat vegetable oil and crack three eggs, cooking until crispy and golden.
Sprinkle toasted sesame seeds and a pinch of salt over the eggs.
Once the noodles are cooked, drain most of the water, leaving a little bit in the pot.
Add the peanut butter sauce to the noodles and mix well until the noodles are coated.
Serve the noodles in a bowl, top with the crispy eggs, sesame seeds, chopped coriander, green onions, and a drizzle of chili sauce.
