Vietnamese Sour Snakehead Fish Soup

Ingredients
- 1.16 lbs snakehead fish, sliced
- 0.7 lbs tomatoes
- 0.7 lbs pineapple
- 0.5 lbs okra
- 0.23 lbs bean sprouts
- 0.2 lbs colocasia gigantea (elephant ear plant)
- 1 horn pepper
- 6 garlic leaves
- Coriander
- Sawleaf
- Fried shallots
- 4 kumquats
- Salt
- Sugar
- Fish sauce
- Broth mix
Instructions
- Marinate fish with 1/3 TBSP broth mix, 1/2 TBSP fish sauce, and 1 TSP chopped garlic for 10 minutes.
- Fry marinated fish until firm.
- Boil 1.2 liters of water with 1/2 TBSP salt, 1/2 TBSP sugar, and 1/2 TBSP fish sauce. Add fish and cook for 5 minutes.
- Add pineapple, tomato, and okra. Season with 1.5 TBSP sugar, 1 TBSP fish sauce, and 1 TBSP kumquat juice.
- Add colocasia, bean sprouts, sawleaf, coriander, horn pepper, and fried fish. Simmer.
- Garnish with fried shallots, sawleaf, and horn pepper. Serve hot.
