Prepare a sponge by whisking together 1 cup flour, 1 cup water, yeast, and honey. Let it sit for 30 minutes.
In a mixer, combine the sponge with 3 more cups of flour, 1 more cup of water, and olive oil. Mix until combined.
Add salt and knead for about 10 minutes. Let the dough rise in a bowl for 1-1.5 hours.
Shape the dough into balls, let them rest for 15 minutes, then shape them into flatbreads.
Dimple the flatbreads, sprinkle with nigella seeds, and bake at 475°F for 15-16 minutes until golden brown.
