Place the chicken pieces in a bag with a scoop of flour and shake until coated.
In a bowl, whisk the eggs until smooth and add the chicken pieces to the bowl.
In the same bag used for the flour, add cornflakes and crush them into a mixture of fine and bigger flakes.
Add the chicken pieces to the bag with the cornflake mixture and shake until coated. Press the breading onto the chicken pieces.
Place the breaded chicken pieces in the air fryer basket and spray with oil.
Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Serve with your favorite dipping sauce.
