Wash and dry potatoes, then poke holes in them with a fork. Toss with butter flavored olive oil and bacon sea salt.
Bake potatoes for about 40-60 minutes until cooked through.
Cut potatoes in half, scoop out some of the filling, leaving a quarter-inch border.
Brush potato halves with butter or butter flavored olive oil and bake again at 375 degrees Fahrenheit for 10 minutes.
Fill potato halves with mozzarella, cheddar, bacon, and bake for an additional 3-5 minutes until cheese melts.
Garnish with green onions, sour cream, and freshly ground black pepper.
