Elderflower Panna Cotta with Roasted Strawberries

Ingredients
- Elderflower blossoms
- Oat cream
- Maple syrup
- Tonka bean (or vanilla/almond extract)
- Cornflour
- Milk
- Strawberries
- Sapling vodka
- Coconut sugar
- Chickpea water
- Hibiscus Kombucha (homemade)
- Ice
- Water
Instructions
- Heat oat cream in a saucepan, add elderflower blossoms, maple syrup, and grated tonka bean. Infuse gently for 10-15 minutes.
- Strain out elderflower blossoms, keep the infused cream on low heat. Whisk cornflour with milk, add to the cream, and stir until thickened.
- Pour the mixture into molds, refrigerate for 2 hours or overnight to set.
- Make an elderflower tincture by placing elderflower blossoms in a jar, covering with sapling vodka, and infusing for a month.
- Roast strawberries in foil with sapling raspberry and hibiscus vodka, elderflower blossoms, and coconut sugar.
- Make a cocktail with sapling raspberry and hibiscus vodka, hibiscus kombucha, elderflower syrup, strawberries, and chickpea water for foam.
- Serve the panna cottas topped with roasted strawberries and elderflower blossoms. Enjoy the luxurious dessert with the cocktail.
