In a large pot, add chicken thighs and chicken broth. Bring to a boil, then reduce heat to medium-low and cook covered for one hour.
Remove the chicken, debone, and shred it. Add onion, celery, carrots, potatoes, garlic, chicken bouillon, and the shredded chicken back to the pot. Cook covered for about 10 minutes until potatoes are fork-tender.
