Season diced chicken breast with onion powder, garlic powder, black pepper, and soy sauce. Mix well and set aside.
In a pan on high heat, cook frozen mixed vegetables and eggs. Add the white part of the spring onion, then mix in day-old cooked white rice and a bit of soy sauce. Remove from heat and stir in the green part of the spring onion and sesame oil.
In a bowl, combine honey, soy sauce, minced garlic, tomato sauce, and rice vinegar to make the sauce.
Cook seasoned chicken on medium to high heat. Once cooked, add the prepared sauce and corn flour mixed with water to thicken. Simmer for five minutes.
Divide the honey garlic chicken with the fried rice equally and serve. Enjoy!
