Peel and slice the potatoes into 1/4 inch thick sticks and soak them in cold water for 30 minutes.
Pat the potatoes dry with a clean dish towel and toss them in a bowl with 1 tablespoon of duck fat and flaky sea salt.
Preheat the air fryer to 370 degrees and place the potatoes in a flat even layer in the basket.
Air fry the potatoes for 10 minutes, remove the basket, flip the potatoes, and air fry for an additional 5-10 minutes.
Garnish with parsley and another sprinkle of flaky sea salt.
Serve immediately and enjoy!
