Light and Fluffy Popovers

Ingredients
- 4 eggs (room temperature)
- 1 1/2 cups (360 ml) milk
- 3/4 teaspoon kosher salt
- 1 1/2 cups (180 grams) flour
- 3 tablespoons melted butter
Instructions
- Preheat the oven to 450°F and place a rack at the bottom.
- Prep a popover pan by buttering or using baking spray, ensuring thorough coverage to prevent sticking.
- In a blender, combine room temperature eggs, milk, and salt. Blend until smooth.
- Add flour to the blender and blend for 15 seconds.
- Mix in melted butter for an additional 10-15 seconds.
- Fill the prepared popover pan close to full and bake at 450°F for 20 minutes.
- Without opening the oven, reduce the temperature to 350°F and bake for an additional 18-20 minutes until puffed up and golden.
- Remove popovers from the oven and poke holes in each to release steam and prevent collapsing.
- Serve plain or with butter and jam. Enjoy the light and airy popovers!
