Cinnamon sugar (1/4 cup granulated sugar, 1/2 teaspoon cinnamon)
Combine flour, sugar, and salt in a food processor.
Add butter and pulse until mixture resembles coarse crumbs.
Drizzle in ice water and vodka, pulse until dough forms.
Shape into discs, wrap in plastic, and chill.
Peel, core, and chop apples.
Toss apples with lemon juice, lemon zest, sugar, and spices.
Cook apples in butter until softened and caramelized.
Add cornstarch to thicken the filling.
Roll out pie crust and line a pie dish.
Fill with apple pie filling.
Create a lattice crust with remaining dough strips.
Brush with egg wash and sprinkle with cinnamon sugar.
Cover edges with foil to prevent burning.
Bake at 400°F for about 30 minutes, then lower to 375°F if needed.
Bake until golden and bubbly.
Let the pie cool before slicing.
