Big Fat Greek Baked Beans

Ingredients
- 1 pound of Gigante beans (or Hakan tay beans)
- Water
- 2 bay leaves
- Diced red onion
- Sliced or minced garlic
- Tomato sauce and tomato paste (or fresh chopped tomatoes)
- Honey (Greek pine honey preferred, or clover honey)
- Freshly chopped dill
- Olive oil
- Kosher salt
- Freshly ground black pepper
- Cayenne pepper
- Red wine vinegar
- Water (or chicken stock)
- Feta cheese
Instructions
- Soak Gigante beans in water overnight.
- Drain soaked beans and add to a pot with fresh water and bay leaves. Bring to a boil, then simmer until just tender (45-60 minutes).
- Drain beans and transfer to a casserole dish. Add diced red onion, garlic, tomato sauce/paste, honey, dill, olive oil, salt, black pepper, cayenne pepper, red wine vinegar, and water.
- Mix thoroughly and transfer to a lined baking sheet.
- Bake at 350 degrees Fahrenheit for about an hour until bubbly and caramelized.
- Stir to mix in any floating olive oil. Garnish with crumbled feta, olive oil, and fresh dill.
- Serve and enjoy! Optional: Serve with roasted meats or as a vegetarian dish.
