Tomato sauce and tomato paste (or fresh chopped tomatoes)
Honey (Greek pine honey preferred, or clover honey)
Freshly chopped dill
Olive oil
Kosher salt
Freshly ground black pepper
Cayenne pepper
Red wine vinegar
Water (or chicken stock)
Feta cheese
Instructions:
Soak Gigante beans in water overnight.
Drain soaked beans and add to a pot with fresh water and bay leaves. Bring to a boil, then simmer until just tender (45-60 minutes).
Drain beans and transfer to a casserole dish. Add diced red onion, garlic, tomato sauce/paste, honey, dill, olive oil, salt, black pepper, cayenne pepper, red wine vinegar, and water.
Mix thoroughly and transfer to a lined baking sheet.
Bake at 350 degrees Fahrenheit for about an hour until bubbly and caramelized.
Stir to mix in any floating olive oil. Garnish with crumbled feta, olive oil, and fresh dill.
Serve and enjoy! Optional: Serve with roasted meats or as a vegetarian dish.
