Herb Butter Roasted Chicken with Gremolata

Ingredients
- 1 whole chicken
- Kosher salt
- Freshly ground black pepper
- Fresh rosemary
- Fresh thyme
- Butter
- Bacon fat
- Parsley
- Garlic
- Lemon
- Extra virgin olive oil
Instructions
- Spatchcock the chicken by removing the spine and cracking it open. Place it on a foil-lined baking sheet.
- Cure the chicken in salt for 24 hours in the fridge. Optionally, mix kosher salt with baking powder for crispier skin.
- Prepare a mixture of herbs, butter, and bacon fat. Rub it underneath the skin of the chicken.
- Roast the chicken at 450°F for about 45 minutes.
- Make the gremolata by combining chopped parsley, garlic, lemon zest, lemon juice, salt, pepper, and olive oil.
- Once the chicken is cooked, let it rest for at least 10 minutes before carving.
- Carve the chicken into pieces and serve with gremolata on top or on the side. Enjoy your flavorful and crispy herb butter roasted chicken.
