Herb Butter Roasted Chicken with Gremolata

Ingredients

  • 1 whole chicken
  • Kosher salt
  • Freshly ground black pepper
  • Fresh rosemary
  • Fresh thyme
  • Butter
  • Bacon fat
  • Parsley
  • Garlic
  • Lemon
  • Extra virgin olive oil

Instructions

  1. Spatchcock the chicken by removing the spine and cracking it open. Place it on a foil-lined baking sheet.
  2. Cure the chicken in salt for 24 hours in the fridge. Optionally, mix kosher salt with baking powder for crispier skin.
  3. Prepare a mixture of herbs, butter, and bacon fat. Rub it underneath the skin of the chicken.
  4. Roast the chicken at 450°F for about 45 minutes.
  5. Make the gremolata by combining chopped parsley, garlic, lemon zest, lemon juice, salt, pepper, and olive oil.
  6. Once the chicken is cooked, let it rest for at least 10 minutes before carving.
  7. Carve the chicken into pieces and serve with gremolata on top or on the side. Enjoy your flavorful and crispy herb butter roasted chicken.
