Heat oil in a pan and add thinly sliced garlic cloves, onion, and mixed bell peppers.
Add fresh tomatoes, season with salt, black pepper, cumin, red chili powder, and thinly sliced green chili. Optionally, add garam masala.
If tomatoes are too soft, add a bit of sugar. Make small spaces in the pan and crack eggs into them. Cover and cook for five minutes.
Add feta cheese and garnish with coriander leaves before serving.
