Slow Cooker Honey Garlic Chicken Thighs with Potatoes (Original video)
Ingredients:
6 large bone-in skin-on chicken thighs (about 2 pounds)
1 large onion, sliced
1 pound red baby potatoes (or gold potatoes, cut if larger)
2 teaspoons oregano
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons lemon juice
6 cloves garlic, minced
1/2 cup honey
1/3 cup sweet chili sauce
3 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon Dijon mustard
1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions:
In a slow cooker, add chicken thighs, sliced onion, and baby potatoes. Season with oregano, salt, and pepper. Drizzle olive oil over the ingredients and mix well.
In a bowl, combine lemon juice, minced garlic, honey, sweet chili sauce, soy sauce, brown sugar, and Dijon mustard to make the honey garlic sauce. Pour the sauce over the chicken and potatoes in the slow cooker.
Cook on high for 4-6 hours. After 5 hours, if the sauce is runny, mix cornstarch with water and add it to the slow cooker. Continue cooking until the sauce thickens.
Optional: Use a blow torch to brown the chicken skin for better presentation.
Serve over rice or as desired. Enjoy the delicious and easy meal!
