Easy Beef Lo Mein

Ingredients
- 300g beef, cut into bite-sized pieces
- 60g carrot, cut into thin matchsticks
- 1 onion, sliced into quarter-inch thick pieces
- 2 baby bok choy, cut into small pieces
- 1/3 bell pepper, thinly sliced
- Green onions, cut into long strips
- 3 cloves garlic, chopped
- Small amount of ginger, grated
- Egg noodles
- 1 tbsp oil
- 1 tsp toasted sesame oil
- Marinade
- 1/2 tbsp soy sauce
- 1/4 tsp white pepper
- Pinch of sugar
- 1/4 tsp baking soda
- 1 tbsp shaoxing wine
- 1/2 tbsp cornstarch
- 1 tbsp cooking oil
- Sauce
- 1/2 cup water
- 1/2 tbsp chicken bouillon powder
- 2 tbsp soy sauce
- 1/2 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1 tsp sugar
- 1 tbsp shaoxing wine
- 1/4 tsp white pepper
- 1 tbsp cornstarch
- Pinch of MSG (optional)
Instructions
- In a small bowl, mix together all the marinade ingredients. Add the beef and massage it well. Let it marinate in the fridge for 5-10 minutes.
- Cut all the vegetables as instructed.
- In another small bowl, mix together all the sauce ingredients.
- Cook the egg noodles according to the package instructions. Drain and set aside.
- Heat 1 tbsp of oil in a wok or pan over high heat. Add the marinated beef and cook for 2-3 minutes. Remove from the wok and set aside.
- In the same wok, add 2 tbsp of oil over medium-high heat. Add the garlic, ginger, and sauté for 30 seconds. Add the vegetables and stir-fry for 1-2 minutes until they soften.
- Reduce the heat to medium and add the cooked noodles. Stir for 1 minute.
- Add the cooked beef and pour in the sauce. Stir for 2-3 minutes until the sauce thickens.
- Turn off the heat and add 1 tsp of toasted sesame oil. Give it a final mix.
- Serve the lo mein on a plate and sprinkle green onions on top. Enjoy!
