Ingredients

  • 300g beef, cut into bite-sized pieces
  • 60g carrot, cut into thin matchsticks
  • 1 onion, sliced into quarter-inch thick pieces
  • 2 baby bok choy, cut into small pieces
  • 1/3 bell pepper, thinly sliced
  • Green onions, cut into long strips
  • 3 cloves garlic, chopped
  • Small amount of ginger, grated
  • Egg noodles
  • 1 tbsp oil
  • 1 tsp toasted sesame oil
  • Marinade
  • 1/2 tbsp soy sauce
  • 1/4 tsp white pepper
  • Pinch of sugar
  • 1/4 tsp baking soda
  • 1 tbsp shaoxing wine
  • 1/2 tbsp cornstarch
  • 1 tbsp cooking oil
  • Sauce
  • 1/2 cup water
  • 1/2 tbsp chicken bouillon powder
  • 2 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • 1 tbsp shaoxing wine
  • 1/4 tsp white pepper
  • 1 tbsp cornstarch
  • Pinch of MSG (optional)

Instructions

  1. In a small bowl, mix together all the marinade ingredients. Add the beef and massage it well. Let it marinate in the fridge for 5-10 minutes.
  2. Cut all the vegetables as instructed.
  3. In another small bowl, mix together all the sauce ingredients.
  4. Cook the egg noodles according to the package instructions. Drain and set aside.
  5. Heat 1 tbsp of oil in a wok or pan over high heat. Add the marinated beef and cook for 2-3 minutes. Remove from the wok and set aside.
  6. In the same wok, add 2 tbsp of oil over medium-high heat. Add the garlic, ginger, and sauté for 30 seconds. Add the vegetables and stir-fry for 1-2 minutes until they soften.
  7. Reduce the heat to medium and add the cooked noodles. Stir for 1 minute.
  8. Add the cooked beef and pour in the sauce. Stir for 2-3 minutes until the sauce thickens.
  9. Turn off the heat and add 1 tsp of toasted sesame oil. Give it a final mix.
  10. Serve the lo mein on a plate and sprinkle green onions on top. Enjoy!
