In a large bowl, mix together the whole wheat flour and salt.
Add the instant yeast to the warm milk and stir until dissolved. Pour the mixture into the bowl with the dry ingredients and mix well.
Add the applesauce, egg, and maple syrup to the bowl and mix until a dough forms. Knead the dough until it bounces back.
Let the dough rise for about an hour.
Roll the dough into a large rectangle.
Soak the dates in hot water for a few minutes, then blend them with cinnamon until smooth.
Spread the date mixture over the dough, then roll it up and slice it into pieces.
Place the pieces in a tray and proof for 45 minutes.
Brush the rolls with milk, then bake for 25 minutes.
