Quick and Easy Spring Rolls

Ingredients
- Pork belly
- Aromatics
- Salt
- Minced garlic
- Hoisin sauce
- Peanut butter
- Somal
- Rice vinegar
- Coconut soda or water
- Shrimp
- Rice paper
- Vermicelli
- Carrots
- Cucumber
- Lettuce
- Cilantro
- Mint
- Thai Basil
Instructions
- Simmer pork belly with aromatics and salt for 15 minutes until cooked through.
- Make the sauce by sautéing minced garlic, then adding hoisin sauce, peanut butter, somal, rice vinegar, and thinning it out with coconut soda or water. Let it cool down.
- Put the cooked pork in an ice bath. Add peeled shrimp to the same pot with the heat off for a few minutes, then place the shrimp in the ice bath. Slice the pork belly and shrimp.
- Pour boiling water onto vermicelli sheets, place in an ice bath, and prep the vegetables (carrots, cucumber, lettuce, cilantro, mint, Thai Basil).
- Dip rice paper into warm water and layer with vermicelli, lettuce, carrots, cucumber, herbs, pork belly, and shrimp. Roll it up, tucking in the sides.
