Put the cooked pork in an ice bath. Add peeled shrimp to the same pot with the heat off for a few minutes, then place the shrimp in the ice bath. Slice the pork belly and shrimp.
Pour boiling water onto vermicelli sheets, place in an ice bath, and prep the vegetables (carrots, cucumber, lettuce, cilantro, mint, Thai Basil).
Dip rice paper into warm water and layer with vermicelli, lettuce, carrots, cucumber, herbs, pork belly, and shrimp. Roll it up, tucking in the sides.
