In a pan, combine potatoes, peas, tomatoes, water, and salt. Cover and cook for 15-20 minutes until vegetables are cooked.
Mash the cooked vegetables using a potato masher, adding water if needed for desired consistency.
In the same pan, heat butter and sauté onion, cumin seeds, garlic paste, chili powder, capsicum, turmeric, and garam masala.
Add the mashed vegetable mixture to the pan and mix well. Adjust salt and consistency with water if needed.
Optionally, add food grade red color for a street food look.
Toast buttered pav (bread rolls) on a griddle until golden brown.
Serve the Pav Bhaji with the toasted pav and enjoy!
