Grate an onion into a plate and extract the onion juice for the marinade.
Add lemon juice, yogurt, cardamom, clove, coriander seed, ginger, allspice, Aleppo pepper, chili powder, and salt to the onion juice. Mix well to create the marinade.
Coat the sliced meat with the marinade and let it marinate.
Preheat a sheet tray on high broil and evenly spread out the marinated meat on it.
Place the tray in the oven on high broil until the meat is cooked.
Assemble the sandwich with slices of tomato, sumac onions, parsley, tahini sauce, pomegranate molasses, shatta (if desired), and pan drippings.
Toast the assembled sandwich quickly before serving.
