Smoke the burgers and spicy dinos on a dirty smoker.
Cook the bacon and shallots, set the bacon aside.
Drain some grease but keep a little, throw in the shallots and deglaze with one ounce of Blanton's.
Add the bacon back in, then add some maple syrup and cheese to the burgers.
Reduce the bacon jam and cut the heat.
Fry an egg.
Assemble the burger with mustard, spicy pickle, bacon jam, and a fried egg.
