Rinse the short grain rice thoroughly by running it under water and letting it dry for about 15 minutes.
In a medium saucepan over high heat, combine the rinsed rice and cold water. Bring it to a boil.
Once boiling, reduce the heat to medium, cover, and let it cook for 10 minutes.
After 10 minutes, reduce the heat to low and cook for an additional 10 minutes.
Remove the rice from heat and let it stand untouched for 15 minutes.
In a separate bowl, mix the sugar, salt, rice vinegar, and white wine vinegar until the sugar dissolves.
Transfer the cooked rice to a large bowl and slowly mix in the vinegar mixture using a chopping and folding method.
Fan the rice slightly to help it dry.
Your homemade sushi rice is ready to be used for sushi, poke bowls, or other dishes. Enjoy!
