Chewy Chocolate Chip Cookies

Ingredients

  • 2 and 1/4 cups (270 grams) all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup (226 grams) room temperature butter
  • 3/4 cup (150 grams) granulated sugar
  • 3/4 cup (165 grams) light brown sugar
  • 1 large room temperature egg
  • 1 tablespoon (15 mL) vanilla extract
  • Chocolate chips

Instructions

  1. In a bowl, whisk together the flour, baking soda, and salt.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugars until light and fluffy.
  3. Add the egg and vanilla extract and mix until well combined.
  4. Gradually add the flour mixture and mix until almost combined.
  5. Add the chocolate chips and mix until just combined.
  6. Chill the dough in the fridge for at least an hour.
  7. Preheat the oven to 375°F (190°C).
  8. Scoop the dough into roughly 1 and 1/2 inch sized balls and place them on a baking sheet.
  9. Place 3 chocolate chips on top of each cookie.
  10. Bake for 10-12 minutes or until the edges are golden and set.
  11. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
