In a separate bowl, mix melted coconut oil and brown sugar until well combined. Add almond milk and vanilla extract, then gradually stir in the dry ingredients until a dough forms. Fold in chocolate chips.
Scoop dough onto the prepared baking sheet, spacing cookies apart. Bake for 10-12 minutes until edges are golden brown.
