Pescado en Papel (Baked Fish and Vegetables in Foil)

Ingredients
- 2 white fish fillets (such as flounder)
- 2 carrots
- 1 calabacita (or zucchini)
- 1 red bell pepper
- 3/4 large onion
- 3/4 cup mayonnaise
- 2 teaspoons chicken bouillon
- 2 large garlic cloves
- 2 tablespoons butter
- Salt and pepper to taste
- Cilantro leaves
- Mexican oregano (or regular oregano)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the vegetables: Slice the carrots, calabacita, red bell pepper, and onion into thin strips.
- In a bowl, mix mayonnaise, grated garlic, and chicken bouillon to create a flavorful mixture.
- Lay out two large pieces of aluminum foil and parchment paper. Rub butter on the parchment paper.
- Arrange the vegetables on the parchment paper, season with salt and pepper.
- Place a fish fillet on top of the vegetables, season with salt and pepper, and spread the mayonnaise mixture generously.
- Add more vegetables, cilantro leaves, and oregano on top of the fish.
- Fold the parchment paper and aluminum foil to create a sealed packet.
- Bake the packets in the preheated oven for about 20-25 minutes until the fish is cooked through.
- Carefully open the packets, serve the fish and vegetables with cilantro lime rice.
