Pescado en Papel (Baked Fish and Vegetables in Foil) (Original video)
Ingredients:
2 white fish fillets (such as flounder)
2 carrots
1 calabacita (or zucchini)
1 red bell pepper
3/4 large onion
3/4 cup mayonnaise
2 teaspoons chicken bouillon
2 large garlic cloves
2 tablespoons butter
Salt and pepper to taste
Cilantro leaves
Mexican oregano (or regular oregano)
Instructions:
Preheat the oven to 375°F (190°C).
Prepare the vegetables: Slice the carrots, calabacita, red bell pepper, and onion into thin strips.
In a bowl, mix mayonnaise, grated garlic, and chicken bouillon to create a flavorful mixture.
Lay out two large pieces of aluminum foil and parchment paper. Rub butter on the parchment paper.
Arrange the vegetables on the parchment paper, season with salt and pepper.
Place a fish fillet on top of the vegetables, season with salt and pepper, and spread the mayonnaise mixture generously.
Add more vegetables, cilantro leaves, and oregano on top of the fish.
Fold the parchment paper and aluminum foil to create a sealed packet.
Bake the packets in the preheated oven for about 20-25 minutes until the fish is cooked through.
Carefully open the packets, serve the fish and vegetables with cilantro lime rice.
