Season beef cheek meat and tongue with salt, pepper, and garlic.
Place seasoned meat in a pot with onions, garlic, bay leaf, and water.
Cook on high for 6 hours, then switch to 8 hours on low.
Remove cooked meat, separate fat, and shred the meat.
Serve on warm corn tortillas.
Rinse beef tripe cubes and remove excess fat.
Place tripe in a pot with water, menudo spice mix, pepper, salt, cumin, garlic, and onion.
Cook at 350°F for several hours, stirring occasionally.
Adjust seasoning as needed with more spice mix or salt.
Serve with chopped onions, cilantro, lime, and enjoy.
