Grill the corn on the barbecue until charred or use an air fryer. Shave off the kernels and add them to a bowl.
Add chopped jalapeno, green onions, and parsley or cilantro to the bowl. Toss to combine.
In a separate bowl, mix together mayo, sour cream, lime juice, and tahini to make the dressing.
Pour the dressing over the corn mixture and toss to coat.
