Add diced veggies (bell peppers, onion, jalapenos) to the beef, followed by seasonings (beef bouillon, cumin, smoked paprika, chili powder, cinnamon).
Stir in garlic, tomato paste, crushed tomatoes, and tomato soup. Mix well.
Add black beans, red kidney beans, and liquid smoke. Stir to combine.
Simmer for 1-2 hours, allowing flavors to meld.
Add fire-roasted tomatoes and Mexican beer or beef broth to adjust consistency.
Serve hot, garnished with cheddar cheese and a dollop of sour cream. Enjoy!
