Season the Wagyu Picanha with salt and pepper, then cook sous-vide at 135 degrees Fahrenheit for two hours.
Prepare Brazilian style fried rice: Cook bacon, onions, garlic, Brazilian sausage, green peas, and previously cooked jasmine rice together. Season with salt and pepper.
Make Bollinger horns: Season rice with black pepper, smoked Hungarian paprika, hot chili panko breadcrumbs, and eggs. Form into balls and fry.
Sear the cooked Wagyu Picanha until dry for a nice sear.
Serve the Wagyu Picanha with the Brazilian style fried rice and Bollinger horns. Enjoy!
