Shepherd's Pie

Ingredients
- 2 lbs ground lamb
- 2 large carrots, diced
- 3 celery ribs, diced
- 1 large onion, diced
- 1 and 1/2 cups beef stock
- 12 oz Guinness beer
- 4 tbsp Worcestershire sauce
- 1 cup peas
- 1 tbsp thyme
- 1 tbsp rosemary
- 5 cloves garlic, minced
- 3 oz tomato paste
- 1/4 cup flour
- For Mashed Potatoes
- 4 lbs russet potatoes
- 3/4 cup heavy cream
- 1 stick butter
- 3 egg yolks
- 1 and 1/4 cups grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Brown ground lamb in a large pan over medium heat.
- Add diced carrots, celery, and onion. Cook until softened.
- Stir in minced garlic and tomato paste, cook until fragrant.
- Pour in Guinness beer, Worcestershire sauce, and beef stock. Bring to a boil, then simmer until reduced by half.
- Add peas, thyme, rosemary, and flour. Simmer until thickened.
- For mashed potatoes, boil and rice potatoes. Mix in butter, heavy cream, Parmesan cheese, salt, pepper, and egg yolks.
- Spread the lamb mixture in a baking dish, top with mashed potatoes.
- Bake at 400°F for 20 minutes, then broil for 2-3 minutes until golden brown.
- Serve and enjoy!
