In a food processor, combine fresh basil or cilantro, tofu, and quinoa. Pulse until well combined.
Transfer the mixture to a large bowl and add chopped shallots.
Mix in tomato paste, gochujang or Thai red curry paste, and coconut aminos or tamari.
Form patties using a 1/3 cup measurement.
Bake the patties until cooked through.
Serve and enjoy! These patties are high in protein, fiber, and iron. They can be frozen for up to 3 months. You can also use this recipe to make vegan meatballs.
