Freezer-Friendly Sausage Egg McMuffins

Ingredients
- 8 large eggs
- 200 g cottage cheese
- 40 g Gochujang (spicy chili paste)
- Freshly ground black pepper
- 600 g ground meat (turkey or beef)
- Salt, garlic powder, onion powder, paprika
- 8 English muffins
- 8 slices American cheese
- Optional: 10 g light mayonnaise
Instructions
- Preheat oven to 200°C (400°F).
- In a blender, combine eggs, cottage cheese, Gochujang, and black pepper. Blend until frothy.
- Distribute egg mixture into meal prep containers and bake for 17-20 minutes.
- Season ground meat with salt, garlic powder, onion powder, and paprika. Form into 8 patties.
- Toast English muffins in a toaster oven or under a broiler.
- Top each muffin with a slice of cheese and a cooked egg rectangle.
- Cook meat patties in a pan for 2 minutes on each side.
- Place cooked meat on top of the egg-topped muffins.
- Let cool for 10 minutes, then store in Ziploc bags in the freezer.
- To reheat, microwave on medium to medium-low heat for 5 minutes.
