Chicken with Tomato and Garlic Sauce

Ingredients
- 1 liter tomato juice
- 700 grams chicken meat
- 4 garlic cloves, sliced
- 3 to 4 tablespoons of oil
- 1 bunch of parsley
- 4 garlic cloves, finely chopped
- 1 tablespoon dry thyme
- Salt and black pepper
Instructions
- Heat oil in a frying pan. Add chicken meat, season with salt and black pepper, and cook until golden on both sides. Remove the meat from the pan.
- In the remaining oil, sauté chopped garlic for about a minute until fragrant.
- Add tomato juice, dried thyme, and bring to a boil.
- Return the chicken to the pan, cover, and cook for 20 minutes or until cooked through.
- Remove the lid, add sliced garlic cloves, and let the sauce boil for an additional 5 minutes.
- Once the garlic is cooked, remove from heat and sprinkle parsley on top.
- Serve the chicken with tomato and garlic sauce with polenta or mashed potatoes. Enjoy!
