Add tomato juice, dried thyme, and bring to a boil.
Return the chicken to the pan, cover, and cook for 20 minutes or until cooked through.
Remove the lid, add sliced garlic cloves, and let the sauce boil for an additional 5 minutes.
Once the garlic is cooked, remove from heat and sprinkle parsley on top.
Serve the chicken with tomato and garlic sauce with polenta or mashed potatoes. Enjoy!
