Wash and quarter 10 apples, leaving the core in. Keep the skins on for color.
Place the apples in a large pot and fill with water, ensuring it covers the apples by about two inches.
Add sugar, cinnamon, and allspice to the pot.
Stir the mixture and bring it to a boil, then simmer uncovered for about an hour.
Cover the pot and let it simmer for an additional two hours.
Strain out the solids from the mixture, pressing out any leftover juice from the cooked apples.
Strain the liquid through cheesecloth into another pot or pitcher.
Serve the apple cider hot or cold, garnishing with a cinnamon stick if desired. Enjoy!
