In a small bowl, mix together flour, cocoa powder, salt, and espresso powder. Set aside.
In a medium-large bowl, whisk together sugar and melted butter. Vigorously whisk in eggs one at a time, then vanilla extract.
Mix in flour mixture until smooth and glossy. Gently fold in chopped chocolate.
Transfer batter to a greased, parchment-lined 8x8 baking pan. Bake at 350°F (175°C) for 35-40 minutes, or until a toothpick comes out clean.
Let cool to room temperature before cutting.
In a small pot, combine butter and vegetable oil. Heat over medium heat until melted.
In a separate bowl, whisk together flour, cocoa powder, and salt.
In a medium-large bowl, whisk together brown sugar, granulated sugar, melted butter mixture, and eggs/yolk one at a time. Whisk in vanilla extract.
Mix in flour mixture until just hydrated and glossy.
Transfer batter to a greased, parchment-lined 8x8 baking pan. Bake at 350°F (175°C) for 30-35 minutes, or until a toothpick comes out clean.
Let cool to room temperature before cutting.
Follow the same instructions as Fudgy Brownies, but fold in crushed pretzels, crushed potato chips, and mini marshmallows before transferring to the baking pan.
Top with additional crushed pretzels, potato chips, and chopped chocolate.
Optional: add butterscotch chips to the batter.
Bake and cool as directed above.
