Boil water with salt and blanch a bunch of spinach leaves for 3-4 minutes. Transfer to ice water to retain color.
Grind the cooled spinach leaves into a fine puree.
Heat ghee in a pan, add cumin seeds, garlic, and red chilies. Saute, then add chopped onions and cook till soft.
Add chopped tomatoes and cook till soft. Add coriander seed powder and garam masala powder.
Mix in the spinach puree, salt, and paneer. Cook for 4-5 minutes on medium flame.
Garnish with fresh cream and serve.
