Ingredients

  • Dried chickpeas or canned chickpeas
  • Water
  • Baking soda (if using dried chickpeas)
  • Vegetable oil
  • Tahini
  • Freshly squeezed lemon juice
  • Salt
  • Ice

Instructions

  1. Soak dried chickpeas in water for about 6 hours or use canned chickpeas as an alternative.
  2. Rinse soaked chickpeas thoroughly and cook in a pot with water until fully softened (1-2 hours).
  3. Remove foam that forms on the surface while cooking.
  4. Add baking soda to freshly soaked chickpeas to help break down the skin for a smoother texture.
  5. Cook chickpeas until they start to break down and become mushy.
  6. Spread cooked chickpeas on a tray and let them cool in the fridge for about 30 minutes.
  7. Blend cooled chickpeas in a food processor until finely ground.
  8. Gradually add vegetable oil while blending to make the hummus smoother.
  9. Add tahini, lemon juice, salt, and continue blending until well combined.
  10. Add ice cubes gradually while blending to achieve desired texture.
  11. Adjust consistency with more tahini if needed.
  12. Transfer hummus to a container and refrigerate until chilled.
  13. Plate the hummus in a swirl pattern, drizzle with olive oil, and garnish with cooked chickpeas.
  14. Serve and enjoy the smooth and creamy homemade hummus.
