Combine bread flour, water, instant yeast, and kosher salt in a bowl. Mix until smooth and supple.
Let the dough rise until doubled in size, about 1.5 to 2 hours at room temperature.
Portion the dough into 8 pieces, shape them into balls, and let them rest for 5 minutes.
Pre-shape the dough into logs, then shape them into long ropes and form into pretzel shapes.
Prepare a baking soda solution by baking baking soda and mixing it with water.
Dip the pretzels in the baking soda solution for 3-4 minutes, then rinse in freshwater.
Brush the pretzels with egg white and sprinkle with flaky salt.
Bake at 450°F for 10-15 minutes, rotating the trays halfway through baking.
Serve with mustard or desired dipping sauce. Enjoy!
