German Style Pretzels

Ingredients
- Bread flour
- Water
- Instant yeast
- Kosher salt
- Flaky salt
- Butter
- Barley malt syrup (optional)
- Baking soda
- Egg white
- Mustard (for serving)
Instructions
- Combine bread flour, water, instant yeast, and kosher salt in a bowl. Mix until smooth and supple.
- Let the dough rise until doubled in size, about 1.5 to 2 hours at room temperature.
- Portion the dough into 8 pieces, shape them into balls, and let them rest for 5 minutes.
- Pre-shape the dough into logs, then shape them into long ropes and form into pretzel shapes.
- Prepare a baking soda solution by baking baking soda and mixing it with water.
- Dip the pretzels in the baking soda solution for 3-4 minutes, then rinse in freshwater.
- Brush the pretzels with egg white and sprinkle with flaky salt.
- Bake at 450°F for 10-15 minutes, rotating the trays halfway through baking.
- Serve with mustard or desired dipping sauce. Enjoy!
