Tandoori Chicken

Ingredients
- 5 large chicken legs
- 1 tbsp cumin powder
- 2 tsp smoked paprika
- 1 tsp salt
- 1 tbsp coriander powder
- 1 tsp black pepper
- 1 heaped tbsp Tandoori Masala powder
- 1 tsp turmeric powder
- 2 tsp garlic and ginger paste
- 150 ml natural yogurt
- Lemon juice
- Red food coloring (optional)
- Chili oil (optional)
- Butter or ghee (optional)
- Fresh coriander for garnish
Instructions
- Score the chicken legs and make incisions for even cooking.
- Mix Greek yogurt, spices, garlic and ginger paste, lemon juice, and food coloring (optional) to create the marinade.
- Coat the chicken legs with the marinade, ensuring it gets into the cuts. Marinate for at least 4 hours, preferably overnight.
- Grill the chicken legs for 15 minutes on each side.
- Optionally, smoke the chicken by heating charcoal and placing it near the chicken for desired smokiness.
- Finish by brushing with chili oil or butter, garnishing with fresh coriander, and serving with lemon wedges.
