In the same pan, add more oil if needed. Saute onion, ginger, and garlic until softened. Season lightly with salt.
Add paprika, cayenne powder, garam masala, and sugar. Saute until fragrant.
Stir in crushed tomatoes and let it reduce for 5 minutes. Optionally, blend the mixture until smooth.
Return the mixture to the pan, add the seared chicken, and simmer for 10 minutes.
Stir in heavy whipping cream and simmer for an additional 7-8 minutes until thickened.
Season with salt to taste. Serve with steamed rice and garnish with cilantro if desired.
