Combine flour, Parmesan cheese, Italian seasoning, garlic powder, onion flakes or powder, salt, and yeast in a bowl. Whisk together to combine.
Create a well in the center of the dry ingredients and pour in the room temperature water. Mix until a shaggy dough forms.
Cover the bowl with plastic wrap and let the dough rest overnight.
Preheat a Dutch oven in the oven the next day. Transfer the dough onto a floured surface and fold it to shape into a ball.
Place the dough on parchment paper, sprinkle with additional cheese if desired, and transfer it to the preheated Dutch oven.
Bake covered for 30 minutes, then uncovered for 18-20 minutes until golden brown.
Allow the bread to cool completely before slicing. Enjoy the crispy, flavorful bread on its own or with soups, beans, toast, or sandwiches.
