Grandma's Spaghetti and Meatballs (Original video)
Ingredients:
- 2 small yellow onions
- 1 head of garlic
- Parmesan cheese rind
- Olive oil
- Tomato paste
- Crushed red pepper flakes
- Canned whole tomatoes
- Salt
- Pepper
- Sugar
- Fresh basil
- Breadcrumbs
- Grated Parmesan cheese
- 2 eggs
- Milk
- Ground beef
- Ground pork
Instructions:
- Dice the onions and mince the garlic. Reserve half of the onion and garlic mixture for the meatballs.
- In a pan, sauté onions, garlic, Parmesan rind, tomato paste, and red pepper flakes until fragrant.
- Crush canned whole tomatoes by hand and add to the pan. Season with salt, pepper, sugar, and fresh basil. Simmer.
- Mix breadcrumbs, grated Parmesan, eggs, milk, and reserved onion-garlic mixture. Let sit.
- Toast breadcrumbs in olive oil until golden brown.
- Combine breadcrumb mixture with ground beef, ground pork, chopped basil, salt, and pepper. Mix gently.
- Shape meatballs and sear in olive oil until golden brown.
- Add meatballs to the tomato sauce and simmer.
- Cook spaghetti in salted water. Reserve some pasta water.
- Toss cooked spaghetti with olive oil, Parmesan, and pasta water.
- Plate spaghetti, top with sauce, meatballs, Parmesan, olive oil, breadcrumbs, and fresh basil.
- Serve and enjoy!
