Optional: 1/16th teaspoon turmeric or a pinch for color
Optional: 1/2 teaspoon citric acid or 1 and 1/2 teaspoons cream of tartar

3 egg yolks
Instructions:
Preheat oven to 350°F and line a 9-inch square baking pan.
Prepare the crust by browning 10 tablespoons of butter, then mix with flour, sugar, salt, and water. Press into the pan and bake until golden.
For the filling, combine lemon zest, lemon juice, sugar, flour, salt, and optional ingredients in a saucepan. Cook until thickened.
Temper the eggs with the hot lemon mixture, then return to the saucepan and cook until thickened.
Strain the filling onto the baked crust and bake until set, around 7-15 minutes.
Let the bars cool completely, then chill in the fridge for at least 3 hours or overnight.
Dust with powdered sugar, cut into squares, and serve. Enjoy the ultimate lemon bars!
