In a large mixing bowl, combine the flour, baking powder, and salt.
In a smaller bowl, mix together the egg, milk, melted butter, and vanilla essence.
Make a well in the dry ingredients and pour in the wet ingredients. Fold the batter together until there are no longer any large lumps.
Heat a heavy-bottomed pan over medium-low heat and add a small amount of butter to melt.
Scoop out about 1/3 cup of batter and pour into the pan. Cook until air bubbles start to form on the top, then flip and cook for a further few minutes on the opposite side.
Repeat with the remaining batter, adjusting the heat as needed.
Serve the pancakes with maple syrup and your favorite toppings. Enjoy!
