Mix apples with sugar, flour, lemon juice, nutmeg, cinnamon, and optional spices.
Roll out one round of pastry and place it in a pie dish.
Fill the pie crust with the apple mixture, dot with butter.
Roll out the second round of pastry and create a lattice crust on top.
Brush the pastry with beaten egg and sprinkle with granulated sugar.
Bake at 425°F for 20 minutes, then reduce heat to 375°F and bake for about 50 minutes until golden brown.
