Ingredients

  • St. Louis ribs, cut in half
  • Salt
  • 2 large garlic cloves
  • 1 cup water
  • 5 Roma tomatoes
  • 1/2 medium onion
  • 2 guajillo chiles
  • 4 chile de arbol
  • 1 Serrano pepper
  • 4 garlic cloves
  • 1 tbsp chicken bouillon
  • 1 1/2 cups water
  • 3 whole cloves
  • 5 whole allspice
  • 1 tsp Mexican oregano
  • 1 tsp whole peppercorns
  • 1 tsp whole cumin
  • 2 large bay leaves
  • Corn tortillas, refried beans, and Mexican rice (for serving)

Instructions

  1. Salt the ribs generously and let them sit to draw out moisture.
  2. Cook the ribs with garlic and water on medium heat for about 35 minutes.
  3. Roast tomatoes, onion, chiles, pepper, and garlic. Blend with chicken bouillon and water.
  4. Grind cloves, allspice, oregano, peppercorns, and cumin.
  5. Sear the ribs until golden, then add onions and ground spices.
  6. Pour in the blended mixture, add bay leaves, and simmer on medium-low for 30 minutes.
  7. Serve the Costillas en Salsa Roja with corn tortillas, refried beans, and Mexican rice. Enjoy!
