Costillas en Salsa Roja (Pork Ribs in Red Salsa)

Ingredients
- St. Louis ribs, cut in half
- Salt
- 2 large garlic cloves
- 1 cup water
- 5 Roma tomatoes
- 1/2 medium onion
- 2 guajillo chiles
- 4 chile de arbol
- 1 Serrano pepper
- 4 garlic cloves
- 1 tbsp chicken bouillon
- 1 1/2 cups water
- 3 whole cloves
- 5 whole allspice
- 1 tsp Mexican oregano
- 1 tsp whole peppercorns
- 1 tsp whole cumin
- 2 large bay leaves
- Corn tortillas, refried beans, and Mexican rice (for serving)
Instructions
- Salt the ribs generously and let them sit to draw out moisture.
- Cook the ribs with garlic and water on medium heat for about 35 minutes.
- Roast tomatoes, onion, chiles, pepper, and garlic. Blend with chicken bouillon and water.
- Grind cloves, allspice, oregano, peppercorns, and cumin.
- Sear the ribs until golden, then add onions and ground spices.
- Pour in the blended mixture, add bay leaves, and simmer on medium-low for 30 minutes.
- Serve the Costillas en Salsa Roja with corn tortillas, refried beans, and Mexican rice. Enjoy!
