Easy Ground Beef Chili

Ingredients
- Ground beef (3 pounds)
- Onion (1, diced)
- Garlic (6 cloves, minced)
- Chili powder (3 tablespoons)
- Cumin (1 tablespoon)
- Oregano (1 tablespoon)
- Garlic powder (2 teaspoons)
- Salt and black pepper (to taste)
- Rotel tomatoes (2 cans, 10 ounces each)
- Chicken stock (3 cups)
- Red beans (2 cans, 15 ounces each)
- Bay leaves (2)
- Fish sauce (to taste)
- Masa harina (to thicken)
Instructions
- Heat oil in a pot over high heat and add ground beef. Let it brown on one side without moving it too much.
- Add diced onion and minced garlic to the pot and stir until the onions are soft.
- Add chili powder, cumin, oregano, garlic powder, salt, and black pepper to the pot and stir until the spices are fragrant.
- Add Rotel tomatoes, chicken stock, red beans, and bay leaves to the pot and stir to combine.
- Let the chili simmer for 30 minutes to develop the flavors, or cook in a pressure cooker for 20-30 minutes.
- Add fish sauce and masa harina to the pot to thicken and enhance the flavor.
- Serve with grated cheese, Mexican sour cream, and cilantro. Enjoy!
